Lemon-Garlic-Basil Pasta
Combining three classic Italian flavours, this meal is quick and easy to make using lots of simple ingredients. It’s a great recipe to have in your back-pocket when you want something tasty but are pushed for time.
Ingredients
I’ve listed the ingredients for one person. If you are feeding a crowd, just scale up the ingredients. This recipe is very flexible, so don’t be afraid to adapt it to your taste. For example you can add chilli flakes for an extra flavour.
- 75-125g of dried pasta. How hungry are you feeling?
- Half a lemon
- Two to three cloves of Garlic
- Two teaspoons of dried Basil
- Two tablespoons of Olive Oil
- Salt and pepper, to taste
- Vegetables such as peas, green beans and/or side salad
Recipe
First peel and finely chop the garlic, and squeeze the juice from the lemon.
Cook the pasta according to the instructions on the packet. While the pasta is cooking, gently fry the garlic in the olive oil. This should take around three minutes so you’ll have to wait a while before you start this. You want the garlic to turn golden and for its flavour to infuse through the oil.
When the pasta and garlic are ready, add the lemon juice, basil, salt and pepper to the oil and garlic. Drain the pasta but save a small amount of the cooking water. Add a small amount to the sauce to help it stick to the pasta. Mix the pasta and sauce together and serve with vegetables and/or a side salad. Bon appétit!
