Colourful and Creamy Polenta
Polenta is made from corn that is ground and boiled. It usually comes pre-cooked, so you can make a colourful and tasty meal in minutes. Polenta can be used as an alternative to rice, potatoes or other carbohydrates. I love to use it as a base and then serve other things on top of it it. Here I’ve used a added salad but I also like using it to accompany tofu.
Ingredients
The most important ingredients are just the polenta and water. The feta makes it extra creamy, but if you are cooking on a tight budget just skip it. The main measurements are per person and in ml for easy measuring.
- 60ml polenta flour per person
- 240ml water per person
- 30g feta cheese per person (optional)
- Turmeric to taste. I like to use a tablespoon per person to get a bright orange colour
- Salt and pepper to taste
- A colourful mix of vegetables for the salad
Recipe
Start my measuring out all the ingredients before you begin and bring the water to a boil. Mix the polenta, salt, pepper and turmeric together. Once the water is boiling turn the heat down to a medium heat and add the polenta mix. Keep stirring until the mixture starts to thicken.
If you are using cheese, crumble the cheese into the polenta and stir until the cheese is completely mixed in. The polenta will thicken very quickly now, and serve with the salad as soon as it reaches your desired thickness. If you aren’t using cheese, this can take longer but keep stirring and it will still thick up.
